In the heart of Al Ghafeya, Sharjah, a bustling crowd gathers outside Al Qaiem Public Kitchen well before the doors open. Whether arriving in luxury cars, motorcycles, or on foot, customers carry hot pots in hand, eager to take home a share of the kitchen’s famous harees and biryani.
The demand is overwhelming—so much so that a policeman is stationed nearby to manage the crowd. The kitchen prepares an astonishing 4,500kg of food daily, yet by 2:30pm, their sought-after mutton biryani is usually sold out, and by 5:30pm, so is the harees.
A Time-Honored Cooking Process in Sharjah
Even after the crowd disperses, the kitchen remains busy. By 7pm, the team begins preparing ingredients for the next day.
Taraweeh prayers conclude, and the harees simmers over low heat for 10+ hours.
By early morning, it is ground to perfection and packed by 11am—ready for the next day’s rush.
A 10-Person Team Serving Thousands
Despite serving thousands daily, a dedicated team of just 10 people runs the entire operation—from cooking to distribution. Amaan Hyder, the owner, says demand is so high that customers ask why they don’t prepare more. Many travel from Dubai, Ajman, and Umm Al Quwain just for a taste.
A Secret Spice Blend from Multan to Sharjah
Amaan attributes the kitchen’s longstanding popularity to a secret spice blend created by his late father, Jamshed Abbas, who started the business over 20 years ago.
Originally from Multan, Pakistan, Jamshed moved to Dubai in 1989 and worked in banking before pursuing his passion for cooking.
